What will I learn in this program?
The food service industry is a dynamic and diverse career field. You will learn to
- supervise the production and distribution of appropriate quantities of food,
- understand the nutritional needs for a healthy and balanced lifestyle,
- understand the special nutritional needs for acute and chronic illnesses,
- hire, train and evaluate employees,
- purchase food and supplies,
- assess patients’ nutritional needs,
- complete appropriate medical records, and implement/ monitor a department budget
Typical Classes:
Dietary Therapy
This class reviews the principles of nutritional support for prevention and treatment of disease. The assessment, dietary modification, care planning, and counseling of patients are included.
Sanitation
This course is designed to provide knowledge and techniques to prevent food-borne illnesses resulting from contamination and inappropriate handling procedures of food.
Personnel Supervision
You will learn about the functional relationship between management and the labor force, as well as principles of managing people in order to maximize the productive efficiency of the firm through sound procurement, development, utilization and maintenance of the human resources in the enterprise.
Time to completion, taking classes full-time:
Taking classes full-time, you can complete this 24-credit certificate in two semesters.
Career Options:
The dietetics certificate can prepare you to manage the food service of a wide variety of organizations including hospitals, schools, spas, and extended-care facilities. Once you complete this nationally certified program and pass the national exam, you will be a Certified Dietary Manager (CDM) and qualified to work in any state.
